Ingredients
Vegetables:
-
1 lb baby potatoes, halved (or quartered if large)
-
1 lb fresh green beans, trimmed
-
2 tbsp olive oil
-
1 tbsp melted butter (optional, for richness)
Seasoning:
-
1 packet (1 oz) ranch seasoning mix (or 3 tbsp homemade)
-
½ tsp garlic powder
-
½ tsp black pepper
-
Salt to taste (ranch seasoning usually contains some)
Optional Add-Ins:
-
¼ cup shredded Parmesan cheese
-
2 tbsp cooked beef or turkey bacon crumbles
-
Chopped parsley or chives for garnish
-
Lemon wedges for a fresh finish
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
Step 2: Prep the Vegetables
Wash and halve (or quarter) the potatoes so they cook evenly.
Trim the ends off your green beans and pat them dry.
In a large mixing bowl, toss the potatoes and green beans with olive oil and melted butter (if using).
Step 3: Add Seasoning
Sprinkle the ranch seasoning, garlic powder, black pepper, and a light pinch of salt over the vegetables.
Toss everything together until evenly coated.
Step 4: Arrange & Roast
Spread the seasoned vegetables in a single layer on the prepared baking sheet.
Make sure the potatoes are cut-side down for the best caramelization.
Roast for 25-30 minutes, stirring once halfway through, until potatoes are golden and fork-tender and green beans are crisp-tender.
Step 5: Add Optional Finishes
In the last 5 minutes of roasting, sprinkle with Parmesan cheese or bacon crumbles if using.
Return to oven briefly just to melt cheese or crisp the bacon topping.
Step 6: Serve Hot
Transfer to a serving platter or bowl.
Garnish with fresh herbs and serve with lemon wedges for a bright, fresh contrast.
Notes
Cut Evenly – Uniform potato sizes ensure everything cooks at the same time.
Use Fresh Green Beans – They roast better than canned or frozen.
Watch the Oven – For crispier potatoes, broil for the last 2-3 minutes.
Add Protein – Toss in some cooked, diced chicken or sausage for a complete meal.
Make It Cheesy – Finish with shredded cheddar for a gooey twist.
