For the Roasted Potatoes:

  • 2 lbs baby potatoes or Yukon golds, halved or quartered

  • 3 tbsp olive oil

  • 6 cloves garlic, peeled and smashed

  • 1 tsp dried oregano

  • ½ tsp smoked paprika

  • Salt and pepper, to taste

For the Baked Feta:

  • 1 block (about 7 oz) feta cheese

  • 1 tbsp olive oil

  • ½ tsp crushed red pepper flakes (optional)

  • Fresh cracked black pepper

For Garnish:

  • 2 tbsp fresh parsley or dill, chopped

  • Zest of 1 lemon (optional, for brightness)

  • Extra olive oil for drizzling


Instructions

Step 1: Prep the Potatoes

  1. Preheat your oven to 425°F (220°C).

  2. In a large bowl, toss halved potatoes with olive oil, smashed garlic cloves, oregano, paprika, salt, and pepper.

  3. Spread the potatoes in a single layer on a large baking sheet, cut-side down for maximum crispiness.

Step 2: Roast the Potatoes
4. Roast in the preheated oven for 25–30 minutes, stirring halfway through, until golden and crispy on the edges.
5. Remove roasted garlic cloves early if they begin to brown too much.

Step 3: Bake the Feta
6. While potatoes are roasting, place the feta block in a small oven-safe dish.
7. Drizzle with 1 tbsp olive oil, sprinkle with red pepper flakes (if using) and cracked black pepper.
8. Bake in the oven during the last 10–15 minutes of the potato cooking time, or until the feta is soft and lightly golden on top.

 

Step 4: Combine and Serve
9. Once potatoes are done, transfer them to a serving dish.
10. Spoon or crumble the warm baked feta over the top.
11. Add roasted garlic cloves and gently toss or layer.
12. Garnish with chopped herbs, lemon zest, and an extra drizzle of olive oil if desired.

Roast Hot – A hot oven guarantees crispy edges and golden brown potatoes.
