  • 1 pound fresh salmon filets (skin and bones removed)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon Old Bay seasoning
  • ¼ teaspoon garlic powder
  • ½ cup Panko bread crumbs
  • 2 tablespoons chopped fresh parsley
  • ⅛ teaspoon salt (more to taste)
  • ⅛ teaspoon black pepper (more to taste)
  • 2 tablespoons olive oil
  • 4 hamburger buns (or brioche buns)
  • 8 leaves lettuce
  • ½ cup tartar sauce

Instructions

  1. Cut the salmon into ¼-inch pieces. In a food processor, blend one-third of the salmon with mustard, lemon juice, Old Bay seasoning, and garlic powder until almost smooth.
  2. In a bowl, combine the processed mixture with the remaining chopped salmon, breadcrumbs, parsley, salt, and pepper; mix gently.
  3. Form into four patties about 4 inches wide. Refrigerate for at least 30 minutes to firm up.
  4. Heat olive oil in a nonstick skillet over medium heat. Cook each patty for 3-4 minutes on each side until golden brown.
  5. Assemble by spreading tartar sauce on buns, placing lettuce and one patty on top.
