- ¾ cup buttermilk (or milk + 1 teaspoon lemon juice)
- ¼ cup sour cream or Greek yogurt
- 1 tablespoon melted butter
- ½ cup cooked chicken, shredded
- ½ cup cooked ham, diced
- ½ cup shredded cheddar cheese
- 2 green onions, chopped (optional)

Instructions
Step 1: Mix Dry Ingredients
- In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, and smoked paprika.
Step 2: Prepare the Batter
- In a separate bowl, whisk together egg, buttermilk, sour cream, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix—lumps are okay!
Step 3: Add Fillings
- Gently fold in shredded chicken, diced ham, cheddar cheese, and green onions.
Step 4: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown.
- Repeat with remaining batter, adding more butter or oil as needed.
