  • 400 grams shrimp
  • 2 medium-sized eggplants
  • Salt
  • Extra virgin olive oil
  • ¼ onion (chopped)
  • ½ cup white grape juice
  • 1 kg Italian basil tomato sauce
  • Fresh parsley (finely chopped)
  • 450 grams provolone cheese (cubed)

Instructions

  1. Prepare seafood by cutting calamari into pieces and chopping shrimp.
  2. Slice eggplants, sprinkle with salt, and let sit to remove moisture.
  3. In a pot, heat olive oil and sauté onions until golden. Add seafood and simmer briefly before adding grape juice and tomato sauce; cook for 20 minutes.
  4. Fry the salted eggplant slices until golden brown.
  5. Assemble the dish in a baking tray with layers of eggplant, seafood sauce, and cheese; repeat until all ingredients are used.
  6. Bake at 180°C (356°F) for about 30 minutes until heated through.
