  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 34 cloves garlic (minced)
  • 1 cup dry apple juice (divided)
  • 3 tablespoons flour
  • 2 cups seafood stock
  • 1 bay leaf
  • 1 teaspoon Creole seasoning
  • 1 tablespoon bouillon powder
  • ¼ teaspoon cayenne
  • ½ teaspoon white pepper
  • 1 tablespoon fresh lemon juice
  • 1 pound crab meat
  • 1 cup heavy cream
  • Kosher salt (to taste)

Instructions

  1. In a large heavy-bottomed saucepan, melt butter and olive oil over medium heat. Add diced onion, minced garlic, and diced celery; sauté until softened.
  2. Deglaze with dry apple juice and let reduce for 2 minutes.
  3. Sprinkle flour over the mixture and whisk until combined; sauté for an additional minute.
  4. Gradually whisk in seafood stock along with bay leaf, Creole seasoning, bouillon powder, cayenne, and white pepper.
  5. Bring to a boil then reduce heat; simmer for 10–12 minutes until slightly thickened.
  6. Stir in lemon juice, heavy cream, and half of the crab meat; simmer for another 5–8 minutes.
  7. Serve warm garnished with remaining crab meat and fresh herbs.
