- 1 ½ lbs chicken breasts, cut into 1½ inch cubes
- 1 red bell pepper, cut into strips
- 1 orange or yellow bell pepper, cut into strips
- ½ large red onion, cut into strips
- 1 cup diced pineapple (fresh or canned)
- ⅓ cup low-sodium soy sauce
- ¼ cup brown sugar, packed
- 2 tablespoons Worcestershire sauce
- 2 tablespoons pineapple juice
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 1 teaspoon fresh ginger
- 1 teaspoon minced garlic
- ¼ teaspoon crushed red pepper
Instructions
- Preheat oven to 400℉ and line a large sheet pan with foil.
- In a large bowl, combine chopped chicken, bell peppers, and red onion.
- Mix sauce ingredients in a small bowl; reserve half. Pour remaining sauce over the chicken mixture; stir to coat.
- Spread the mixture evenly on the baking sheet; season with salt and pepper. Bake for about 20 minutes.
- Add diced pineapple on top; return to oven for an additional 5–10 minutes until chicken reaches an internal temperature of 165℉.
- Heat reserved sauce in the microwave until thickened; drizzle over the cooked dish before serving.
