Ingredients
- 4 cups cooked shredded chicken
- 1 ounce taco seasoning
- ½ cup water
- 2 tablespoons vegetable oil
- 8 large flour tortillas
- 15 ounces canned black beans (drained and rinsed)
- 1 cup frozen corn kernels (thawed)
- 4 cups shredded Mexican cheese blend
- 2 green onions (thinly sliced)
Instructions
- Preheat your oven to 425°F.
- In a medium skillet, combine shredded chicken, taco seasoning, and water. Simmer until well mixed and water evaporates.
- Brush one side of each tortilla with vegetable oil. Place six tortillas on an 18 x 13-inch baking sheet oiled side down, with half hanging off.
