  • 4 cups cooked shredded chicken
  • 1 ounce taco seasoning
  • ½ cup water
  • 2 tablespoons vegetable oil
  • 8 large flour tortillas
  • 15 ounces canned black beans (drained and rinsed)
  • 1 cup frozen corn kernels (thawed)
  • 4 cups shredded Mexican cheese blend
  • 2 green onions (thinly sliced)

Instructions

  1. Preheat your oven to 425°F.
  2. In a medium skillet, combine shredded chicken, taco seasoning, and water. Simmer until well mixed and water evaporates.
  3. Brush one side of each tortilla with vegetable oil. Place six tortillas on an 18 x 13-inch baking sheet oiled side down, with half hanging off.
  4. Spread the chicken mixture over tortillas, then add black beans, corn, green onions, and cheese.
  5. Place another tortilla on top and fold the edges to seal. Add a second baking sheet on top to weigh it down.
  6. Bake for about 18 minutes until edges crisp up. Remove the top sheet and bake an additional 3 to 5 minutes until golden brown.
  7. Allow to rest for about 5 minutes before slicing into pieces.
