Ingredients

For the Shredded Chicken Gravy:

  • Chicken Breasts (2 large, boneless & skinless) – Cooked and shredded for tender bites.
  • Chicken Broth (2 cups) – The base of the gravy, rich and flavorful.
  • Butter (2 tbsp) – Adds richness to the gravy.
  • All-Purpose Flour (2 tbsp) – Thickens the gravy to perfection.
  • Garlic (2 cloves, minced) – Adds depth of flavor.
  • Onion (½ small, finely chopped) – Enhances the savory taste.
  • Milk (½ cup) – Makes the gravy smooth and creamy.
  • Salt & Black Pepper (to taste) – Balances the flavors.
  • Paprika (½ tsp, optional) – Adds a subtle warmth.

For the Mashed Potatoes:

  • Russet Potatoes (3 large, peeled & cubed) – Creamy and perfect for mashing.
  • Butter (3 tbsp) – Adds richness to the potatoes.
  • Milk (½ cup, warm) – Creates a smooth and creamy texture.
  • Salt (½ tsp, or to taste) – Enhances the flavors.
  • Black Pepper (¼ tsp, or to taste) – Adds a mild kick.

Instructions

Step 1: Cook and Shred the Chicken

  1. Bring a pot of salted water to a boil. Add chicken breasts and cook for 15–20 minutes, until fully cooked.
  2. Remove the chicken, let it cool slightly, then shred with two forks. Set aside.

Step 2: Make the Mashed Potatoes

  1. In a separate pot, boil the cubed potatoes in salted water for 15 minutes, until fork-tender.
  2. Drain and mash the potatoes with butter, warm milk, salt, and black pepper. Mix until smooth and creamy. Cover to keep warm.

Step 3: Prepare the Chicken Gravy

  1. In a saucepan over medium heat, melt the butter. Add the chopped onion and cook for 2–3 minutes until soft.
  2. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  3. Sprinkle in the flour and whisk continuously for 1 minute to make a roux.
  4. Slowly pour in the chicken broth, whisking constantly to prevent lumps.
  5. Add the shredded chicken, milk, salt, pepper, and paprika (if using). Simmer for 5 minutes, stirring occasionally, until thickened.

Step 4: Assemble and Serve

  1. Spoon a generous portion of mashed potatoes onto a plate or bowl.
  2. Ladle the shredded chicken gravy over the top.
  3. Garnish with fresh parsley or a sprinkle of black pepper, if desired. Enjoy!

Notes

  • Use rotisserie chicken if you’re short on time—just shred and add to the gravy!
  • Adjust thickness by adding more broth for a thinner gravy or simmering longer for a thicker consistency.

  • Mash potatoes smoothly by using warm milk and butter. Avoid over-mixing to prevent gluey potatoes.
