  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt
  • 2 tablespoons butter (divided)
  • 1 pound raw shrimp (peeled and deveined)
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon Old Bay seasoning
  • 1 tablespoon minced garlic
  • 1 teaspoon seafood bouillon (optional)
  • 2 cups heavy cream
  • ½ cup Parmesan cheese (shredded)
  • ½ cup Asiago cheese (shredded)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 425°F.
  2. Rub each potato with olive oil and sprinkle with kosher salt. Bake on a parchment-lined baking sheet for 50-60 minutes until tender.
  3. While potatoes are baking, melt 1 tablespoon of butter in a frying pan over medium heat and cook the shrimp for about 2 minutes on each side until pink.
  4. Season the shrimp with Cajun and Old Bay seasoning, then remove from the pan.
  5. In the same pan, melt another tablespoon of butter, add minced garlic, sauté for about a minute, then stir in seafood bouillon and heavy cream until simmering.
  6. Mix in Parmesan cheese, Asiago cheese, and lemon juice until smooth.
  7. Return the shrimp to the sauce, coating them thoroughly.
  8. Cut the baked potatoes lengthwise to create bowls, and fill with shrimp and creamy sauce.
