  • 1 pounds extra-large shrimp (with shells)
  • 1 teaspoon Creole seasoning
  • ¼ teaspoon salt (or to taste)
  • 12 teaspoons butter or olive oil
  • 1 stalk celery (roughly chopped)
  • ½ onion (roughly chopped)
  • 23 cloves garlic (smashed)
  • 34 cups water
  • 2 tablespoons butter
  • ½ cup dry white grape juice (or stock)
  • 1 cup heavy cream

Instructions

  1. In a large pot, boil shrimp shells with water, Creole seasoning, salt, celery, onion, garlic, and bay leaves for about 30 minutes.
  2. Strain the mixture using a fine-mesh sieve and reserve the liquid.
  3. In another pan, melt butter or heat olive oil; sauté minced garlic, chopped onions, and diced celery until softened.
  4. Sprinkle flour into the mixture and stir for two minutes until golden.
  5. Gradually add grape juice (or stock) while stirring continuously.
  6. Pour in the reserved shrimp stock along with Worcestershire sauce and seasonings; stir well.
  7. Gently simmer before adding heavy cream; heat through without boiling.
  8. Adjust seasoning if necessary and serve hot.
