  • 1214 oz large shrimp
  • 12 Tbsp vegetable oil
  • 1 small yellow onion (thinly sliced)
  • 2 large jalapenos (seeded for less heat)
  • 2 medium tomatoes (diced)
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup sour cream
  • 2 garlic cloves (minced)
  • 4 soft taco flour tortillas
  • 8 oz Monterrey Jack cheese (grated)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large pan, heat vegetable oil over medium heat and sauté sliced onions and jalapenos until softened.
  3. Stir in diced tomatoes and minced garlic; cook until tender.
  4. In a bowl, whisk together heavy cream, sour cream, cayenne pepper, chipotle chili powder, cumin, and salt; pour into the pan with sautéed vegetables.
  5. Add shrimp to the sauce; cook until opaque on both sides.
  6. Fill tortillas with half the cheese and shrimp mixture; roll tightly and place seam side down in the baking dish.
  7. Pour remaining sauce over enchiladas and sprinkle with remaining cheese.
  8. Bake for 15-18 minutes until bubbly and golden brown.
