  • 1 ½ pounds medium shrimp (peeled and deveined)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon vegetable oil
  • ⅓ cup butter
  • ⅓ cup all-purpose flour
  • 1 small onion (chopped)
  • ½ green bell pepper (chopped)
  • 2 ribs celery (chopped)
  • 4 cloves garlic (minced)
  • 3 cups chicken broth
  • 2 cups diced fresh tomatoes
  • 3 tablespoons Worcestershire sauce
  • Salt and black pepper (to taste)

Instructions

  1. Season the shrimp with Cajun seasoning and set aside.
  2. Heat vegetable oil in a skillet over medium-high heat, add shrimp, and cook until just pink, about 2 minutes. Remove from pan.
  3. In the same skillet, melt butter over medium heat, stir in flour, and cook until golden brown, about 6-8 minutes.
  4. Add onions, bell pepper, celery, garlic, and thyme to the roux; sauté until softened.
  5. Gradually stir in chicken broth until smooth; then mix in tomatoes and Worcestershire sauce. Bring to a boil and simmer for 20 minutes.
  6. Return shrimp to the skillet along with any juices; heat through without overcooking.
  7. Serve over rice or your choice of sides.
