- 12 ounces bucatini pasta
- 1 tablespoon olive oil
- ¾ pound large shrimp (peeled and deveined)
- 5 tablespoons unsalted butter
- 1 teaspoon sesame oil
- 2 large shallots (chopped)
- 3 cloves garlic (minced)
- 12 ounces shiitake mushrooms (sliced)
- ½ cup white grape juice
- 1½ tablespoons dark soy sauce
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon brown sugar
- ¼ teaspoon red pepper flakes
- Green onions (for garnish)
Instructions
- Cook noodles according to package instructions; reserve 1½ cups pasta water before draining.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook until pink and golden brown (1-2 minutes per side). Remove and set aside.
- In the same skillet, melt butter and sesame oil. Sauté shallots and garlic until softened (2-3 minutes).
- Add shiitake mushrooms, cooking until lightly browned (about 5 minutes).
- Deglaze with white grape juice, scraping up browned bits. Cook until absorbed (about 1 minute).
- Stir in dark soy sauce, low-sodium soy sauce, brown sugar, red pepper flakes, and reserved pasta water; simmer for another 3 minutes.
- Toss cooked noodles into the skillet with the shrimp; garnish with sliced green onions before serving.
