  • 12 ounces bucatini pasta
  • 1 tablespoon olive oil
  • ¾ pound large shrimp (peeled and deveined)
  • 5 tablespoons unsalted butter
  • 1 teaspoon sesame oil
  • 2 large shallots (chopped)
  • 3 cloves garlic (minced)
  • 12 ounces shiitake mushrooms (sliced)
  • ½ cup white grape juice
  • 1½ tablespoons dark soy sauce
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon brown sugar
  • ¼ teaspoon red pepper flakes
  • Green onions (for garnish)

Instructions

  1. Cook noodles according to package instructions; reserve 1½ cups pasta water before draining.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook until pink and golden brown (1-2 minutes per side). Remove and set aside.
  3. In the same skillet, melt butter and sesame oil. Sauté shallots and garlic until softened (2-3 minutes).
  4. Add shiitake mushrooms, cooking until lightly browned (about 5 minutes).
  5. Deglaze with white grape juice, scraping up browned bits. Cook until absorbed (about 1 minute).
  6. Stir in dark soy sauce, low-sodium soy sauce, brown sugar, red pepper flakes, and reserved pasta water; simmer for another 3 minutes.
  7. Toss cooked noodles into the skillet with the shrimp; garnish with sliced green onions before serving.
