  • 3 cloves garlic
  • 3-pound boneless beef chuck roast
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1/3 cup all-purpose flour
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 5 large carrots
  • 1 pound baby Yukon gold potatoes

  2. In a Dutch oven, heat oil over medium-high heat and brown the beef in batches; set aside.
  3. Sauté onions until softened, then add garlic until fragrant.

  5. Add beef broth, scraping browned bits from the pot; simmer until thickened.
  6. Return beef to the pot with additional broth and seasonings; bring to a boil.
  7. Cover and reduce heat, simmering until beef is tender (about 2 hours).
  8. Add chopped carrots and potatoes; cook until veggies are tender (about 30 minutes).
