  • 2 Tbsp vegetable oil
  • 3 pounds beef stew meat
  • 2 cups beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 small white onion (diced)
  • 16 oz. sliced baby bella mushrooms
  • 2½ tsp minced garlic
  • 3 Tbsp cornstarch

Instructions

  1. Sear half of the beef stew meat in a large skillet with vegetable oil over medium-high heat for 1-2 minutes per side until browned. Transfer to the slow cooker and repeat with remaining meat.
  2. In the slow cooker, combine beef broth, Worcestershire sauce, onion soup mix, thyme, diced onion, sliced mushrooms, and garlic. Mix well.
  3. Cook on low for 5-6 hours or high for 3-4 hours until the beef is fork-tender.
  4. To thicken the sauce, whisk together cornstarch and water in a bowl until smooth. Stir into the slow cooker and cook for an additional 15-20 minutes.
  5. Serve over mashed potatoes, rice, or pasta and enjoy!
