Ingredients
For the Beef & Potatoes:
2 lbs beef stew meat or chuck roast, cut into bite-size pieces
1 ½ lbs baby potatoes, halved or quartered
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon paprika
2 tablespoons olive oil (for browning, optional)
For the Garlic Butter Sauce:
6 tablespoons unsalted butter
6 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon Italian seasoning
¼ cup low-sodium beef broth
1 tablespoon fresh parsley, chopped (for garnish)
Optional Add-Ins:
1 small onion, chopped
1 cup carrots, sliced
½ teaspoon crushed red pepper flakes (for a kick)
Instructions
Step 1: Optional – Sear the Beef
Heat olive oil in a skillet over medium-high heat
Sear beef in batches for 1–2 minutes on each side until browned (optional but adds great flavor)
Transfer to the slow cooker
Step 2: Prepare the Slow Cooker
Add halved baby potatoes and optional vegetables to the slow cooker
Place browned (or raw) beef on top
Season with salt, pepper, garlic powder, and paprika
Step 3: Make the Garlic Butter Sauce
In a small saucepan or microwave-safe bowl, melt butter
