  • 1/2 cup mayonnaise
  • 10 ounces pepper jack cheese (cubed)
  • 2 sweet onions (chopped)
  • 1 bottle Tony’s Creole Style Burger Marinade
  • 1 tablespoon Worcestershire Sauce
  • 1/2 lemon (juiced)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Tony’s Lite Creole Seasoning
  • 1 tablespoon garlic powder (for burger rub)
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika (for burger rub)
  • 2 teaspoons black pepper (for burger rub)
  • 2 teaspoons Tony’s Lite Creole Seasoning (for burger rub)
  • 2 tablespoons unsalted butter
  • 1 tablespoon salt
  • Toasted buns
  • Colby Jack 3 Pepper Cheese

Instructions

  1. Prepare the Cajun sauce by mixing mayonnaise, lemon juice, Worcestershire sauce, black pepper, garlic powder, smoked paprika, and seasoning in a bowl. Refrigerate until ready to use.
  2. In another bowl, combine garlic powder, onion powder, smoked paprika, black pepper, and seasoning to create the burger rub.
  3. Mix ground chuck with pepper jack cheese cubes and marinade in a large bowl. Form into patties and freeze for 20 minutes.
  4. Caramelize chopped sweet onions in butter over medium heat until golden brown.
  5. Smoke patties at 250-275°F until they reach an internal temperature of 165°F. Add cheese during the last few minutes to melt.
  6. Assemble burgers on toasted buns with sauce and caramelized onions.
