-
1½ cups granulated sugar
-
1 cup brown sugar, packed

4 large eggs
-
1 tbsp vanilla extract
-
1 cup all-purpose flour
-
1 cup unsweetened cocoa powder
-
½ tsp baking powder
-
½ tsp salt
For the Topping:
-
2 cups mini marshmallows
-
1 cup semisweet chocolate chips

Extra graham cracker pieces for decoration (optional)
Instructions
Step 1: Preheat the Oven and Prepare the Pan
Preheat your oven to 350°F (175°C).
Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: Make the Graham Cracker Crust
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
Press the mixture firmly and evenly into the bottom of the prepared pan.
Bake the crust for 8 minutes, then remove from the oven and set aside.
Step 3: Make the Brownie Batter
In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
Add the eggs and vanilla extract, whisking until fully combined.
Sift in the flour, cocoa powder, baking powder, and salt.
Fold everything together with a spatula until no streaks remain.
Step 4: Assemble and Bake
Pour the brownie batter over the baked graham cracker crust and spread evenly.
Bake for 25-30 minutes, until a toothpick inserted into the center comes out with a few moist crumbs.
Step 5: Add the S’mores Topping
Remove the brownies from the oven and immediately sprinkle mini marshmallows and chocolate chips evenly over the top.
Return the pan to the oven and bake for an additional 3-5 minutes, until the marshmallows are puffed and lightly golden.
Step 6: Cool and Serve
Let the brownies cool completely in the pan.
Use the parchment paper overhang to lift them out and slice into squares.
Optional: Garnish with extra graham cracker pieces for a fun look.
Notes
Use Real Butter – It adds rich flavor and perfect texture to both the crust and the brownies.
Don’t Overbake – Brownies should be fudgy, not dry, so keep a close eye on baking time.
Toast Marshmallows Carefully – Broil for just a few seconds if you want extra golden marshmallows (watch closely!).
Let Them Cool – Cutting into warm brownies can be messy; cooling helps them set beautifully.
Customize – Add a layer of peanut butter or caramel sauce for an extra decadent twist.
