  • 34 turkey cutlets
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon turkey seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup vegetable oil (divided)
  • ½ cup all-purpose flour
  • 2 tablespoons salted butter
  • ½ onion (sliced)
  • 1 cup mushrooms (sliced)
  • 2 teaspoons minced garlic
  • 1 teaspoon fresh thyme (minced)
  • 23 cups chicken stock

Instructions

  1. Pat the turkey cutlets dry and season both sides with salt and pepper.
  2. In a bowl, combine turkey seasoning, garlic powder, and onion powder; rub onto the turkey cutlets.
  3. Mix remaining seasoning with flour in a shallow bowl; coat each cutlet thoroughly.
  4. Heat vegetable oil in a cast iron skillet over medium-high heat; sear the cutlets for about 4–5 minutes per side until golden brown. Set aside.
  5. Sauté onions, mushrooms, minced garlic, and thyme in the same skillet for about 5–7 minutes until tender.
  6. Melt butter in the skillet; add seasoned flour and whisk until smooth.
  7. Gradually whisk in chicken stock until slightly thickened; season with salt and pepper.
  8. Add turkey cutlets back to the skillet and spoon gravy over them; cover and simmer for about 15 minutes.
  9. Serve hot over your choice of mashed potatoes, rice, or pasta.
