  • 3 pounds turkey wings (split into flats and drums)
  • 2 tablespoons olive oil
  • 1 tablespoon Creole seasoning
  • 1 tablespoon poultry seasoning
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • Salt and black pepper to taste
  • ½ large yellow onion (sliced)
  • 1 medium green bell pepper (sliced)
  • 4 ounces unsalted butter
  • 1 teaspoon garlic (minced)
  • 1 teaspoon fresh thyme (chopped)
  • 2 tablespoons flour
  • 2 cups chicken broth
  • ½ cup heavy cream

Instructions

  1. Pat the turkey wings dry and season generously with Creole seasoning, poultry seasoning, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the seasoned turkey wings until golden brown on each side (about 4–5 minutes per side). Remove from skillet and set aside.
  3. In the same skillet, sauté sliced onion and green bell pepper until soft (around 5 minutes). Add minced garlic and thyme; cook for an additional minute.
  4. Sprinkle flour over the vegetables and stir well. Gradually whisk in chicken broth while scraping up browned bits from the pan. Allow it to simmer until slightly thickened.
  5. Return seared turkey wings to the skillet with the gravy mixture and add reserved seasoning along with pan drippings. Stir gently to coat.
  6. Transfer everything to a slow cooker or Dutch oven if not already using one. Cover tightly and cook on low for about 90 minutes until tender.
  7. Finally, stir in heavy cream to create a rich sauce before serving.
