Instructions
Step 1: Make the Oat Flour
- In a blender or food processor, blend rolled oats until they form a fine flour.
Step 2: Mix the Dry Ingredients
- In a large bowl, whisk together oat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
Step 3: Combine Wet Ingredients
- In a separate bowl, whisk together egg, milk, vanilla extract, honey (or maple syrup), melted butter, and Greek yogurt (or applesauce).
Step 4: Make the Pancake Batter
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.
