Ingredients

Scale
  • 1½ cups cornmeal
  • 1 tablespoon granulated garlic
  • 1 teaspoon onion powder
  • ½1 teaspoon cayenne pepper
  • 2 teaspoons salt (adjust to taste)
  • 1½ cups buttermilk
  • 4 (6-ounce) catfish fillets

Instructions

  1. Preheat your deep fryer or large saucepan filled with vegetable oil to 375℉ (190℃).
  2. In a large bowl, mix together cornmeal, granulated garlic, onion powder, cayenne pepper, salt, and black pepper.
  3. Pour buttermilk into another bowl.
  4. If necessary, cut fish fillets into manageable pieces.
  5. Dip each fillet into the buttermilk, allowing excess to drain before coating in the cornmeal mixture.
  6. Carefully fry the breaded fish in hot oil for about 3-4 minutes per side until golden brown and crispy.
  7. Use a slotted spoon to remove fish; let drain on a cookie rack.
  8. Serve immediately with lemon juice and spicy tartar sauce.
