  • 3 cups cooked long grain rice
  • 100 grams cooked chicken (cut into small pieces)
  • 150 grams peeled and deveined shrimp
  • 50 grams green peas
  • 1 diced carrot
  • ½ diced onion
  • 2 cloves finely chopped garlic
  • 23 sliced spring onions
  • 23 tbsp neutral cooking oil
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Prepare all ingredients by dicing vegetables and measuring out each component.
  2. Heat a wok or large frying pan over medium-high heat and add cooking oil.
  3. Scramble whisked eggs in the hot wok until fully cooked; remove and set aside.
  4. Stir-fry onions and garlic for about 1 minute until fragrant, then add carrots and green peas until softened.
  5. Add chicken and shrimp to the vegetable mix; stir-fry until heated through.
  6. Incorporate the cooked rice, breaking clumps apart. Mix in soy sauces, sesame oil, corn starch mixture, pepper, and chicken powder.
  7. Add scrambled eggs and spring onions back into the mix; stir for another minute before serving.
