- 2–3 sliced spring onions
- 2–3 tbsp neutral cooking oil
- 2 tbsp soy sauce
- 1 tsp sesame oil
Instructions
- Prepare all ingredients by dicing vegetables and measuring out each component.
- Heat a wok or large frying pan over medium-high heat and add cooking oil.
- Scramble whisked eggs in the hot wok until fully cooked; remove and set aside.
- Stir-fry onions and garlic for about 1 minute until fragrant, then add carrots and green peas until softened.
- Add chicken and shrimp to the vegetable mix; stir-fry until heated through.
- Incorporate the cooked rice, breaking clumps apart. Mix in soy sauces, sesame oil, corn starch mixture, pepper, and chicken powder.
- Add scrambled eggs and spring onions back into the mix; stir for another minute before serving.
