- SPG seasoning (salt, pepper, garlic powder)
- 1 tablespoon avocado oil
- 4–6 golden potatoes (peeled and cubed)
- 4 tablespoons unsalted butter (divided)
- 1 cup warm whole milk
- Salt and pepper (to taste)
- 2 cups beef broth
- 1/3 cup Worcestershire sauce
- 1–2 tablespoons garlic paste
- 1 tablespoon lemon zest
- Juice of 1/2 lemon
- 3 sprigs fresh rosemary
- 3 sprigs fresh thyme
- 2 tablespoons Dijon mustard
- 1 stick unsalted butter
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- Prepared au jus
- Caramelized onions
- Chopped chives (for garnish)
Instructions
- Season the beef cubes with SPG seasoning and drizzle with avocado oil. Refrigerate.
- Boil peeled and cubed potatoes in salted water until fork-tender. Drain and mash with butter, warm milk, salt, and pepper.
- Caramelize sliced onions in butter over medium heat until golden brown.
- In a saucepan, combine beef broth, garlic paste, lemon zest, lemon juice, rosemary, thyme, Dijon mustard, and butter. Simmer and strain.
