- 4 beef steaks (filet mignon or similar)
- Salt and cracked black pepper
- 1 ½ cups unsalted beef stock
- 2 tbsp unsalted butter
- 1–2 shallots (thinly sliced)
- 4 oz baby bella mushrooms (thinly sliced)
- ¼ cup apple juice
- 2 tsp Dijon mustard
- 1 tbsp Worcestershire sauce
- ¼ cup heavy whipping cream
- Fresh parsley (for garnish)
Instructions
- Bring the beef steaks to room temperature by removing them from the refrigerator about 30 minutes before cooking. Season both sides generously with salt and cracked black pepper.
- Heat canola oil in a skillet over medium-high heat until shimmering. Add the seasoned steaks and cook for about 4-5 minutes on each side for medium-rare doneness. Transfer the steaks to a plate and cover loosely with foil to keep warm.
- In the same skillet, reduce heat to medium and add butter. Once melted, sauté shallots until translucent, then stir in mushrooms until soft.
- Pour in beef stock and apple juice, scraping up browned bits from the skillet. Add Dijon mustard and Worcestershire sauce; simmer until reduced by half.
