For the Beef Marinade:

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain

  • 1 tbsp soy sauce

  • 1 tbsp cornstarch

  • 1 tsp sesame oil

  • 1 tsp grated garlic

  • ½ tsp black pepper

For the Sticky Sauce:

  • 3 tbsp soy sauce

  • 2 tbsp hoisin sauce

  • 1 tbsp oyster sauce

  • 1 tbsp brown sugar

  • 2 tsp rice vinegar or lime juice

  • 1 tbsp water

  • 1 tsp sriracha (optional, for heat)

For the Noodles & Stir-Fry:

  • 8 oz egg noodles, rice noodles, or ramen (cooked and drained)

  • 1 tbsp vegetable oil

  • 3 cloves garlic, minced

  • 1 tsp fresh ginger, grated

  • 1 small red bell pepper, thinly sliced

  • 1 cup snap peas or broccoli florets

  • 2 green onions, sliced

  • Sesame seeds, for garnish (optional)


Instructions

Step 1: Marinate the Beef

  1. In a bowl, combine sliced beef with soy sauce, cornstarch, sesame oil, garlic, and black pepper.

  2. Mix well and let marinate for 10–15 minutes while prepping other ingredients.
    This gives the beef a tender texture and boosts flavor.

Step 2: Prepare the Sauce
3. In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce, brown sugar, rice vinegar, water, and sriracha if using.
4. Set the sauce aside for later.

Step 3: Cook the Noodles
5. Boil noodles according to package instructions until just tender.
6. Drain, rinse briefly under cold water, and toss with a drizzle of oil to prevent sticking.

Step 4: Stir-Fry the Beef
7. Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat.
8. Add marinated beef in a single layer (cook in batches if needed).
9. Sear for 1–2 minutes per side until browned and cooked through.
10. Remove the beef and set aside on a plate.

Step 5: Stir-Fry the Veggies
11. In the same skillet, add garlic, ginger, and sliced bell pepper.
12. Stir-fry for 2–3 minutes until slightly softened.
13. Add snap peas or broccoli and cook for another 2 minutes.

Step 6: Combine Everything
14. Return the cooked beef to the skillet.
15. Add the cooked noodles and pour in the sauce.
16. Toss everything together until noodles are well coated and sauce is sticky and glossy, about 2–3 minutes.
17. Stir in green onions just before removing from heat.

Step 7: Garnish & Serve
18. Serve hot, garnished with sesame seeds or extra green onions if desired.

Notes

Slice Beef Thinly – Cut against the grain for tender, bite-sized strips.
High Heat is Key – Stir-fry quickly over high heat to sear the beef and lock in flavor.
Don’t Overcook Noodles – Slightly undercook them before adding to the pan; they’ll finish cooking in the sauce.
Balance the Sauce – Adjust sweetness or saltiness by tweaking the sugar or soy sauce.
Double the Sauce – If you like extra saucy noodles, make 1.5 times the sauce amount.
