  • 2 cups strawberries, diced (for sauce)
  • ½ cup sugar (for sauce)
  • 1 teaspoon lemon juice (for sauce)

Instructions

  1. In a mixing bowl, whisk together flour, baking powder, and salt. In another bowl, beat milk, eggs, cream cheese, sugar, and vanilla until smooth. Combine wet and dry ingredients gently.
  2. Preheat a griddle over medium heat and lightly grease it. Pour about ¼ cup of batter onto the hot surface for each pancake. Cook until bubbles form on top (about 2–3 minutes), then flip and cook until golden brown.
  3. For the cream cheese spread, mix together the remaining cream cheese, vanilla extract, and sugar until creamy.
  4. To make the strawberry sauce, combine hulled strawberries, diced strawberries, sugar, and lemon juice in a saucepan over medium heat. Stir occasionally until soft and thickened (about 5–7 minutes).
  5. Assemble pancakes by stacking two on each plate with layers of cream cheese spread in between; drizzle warm strawberry sauce on top before serving.
