  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup whipped topping (like Cool Whip)

For the Strawberry Crunch Topping:

  • 12 golden sandwich cookies (like vanilla Oreos)

  • 1 tbsp freeze-dried strawberries

  • 2 tbsp unsalted butter, melted

For Assembly:

  • 68 waffle cones

  • 1 cup fresh strawberries, diced

  • Extra whipped topping, for garnish (optional)

  • Strawberry syrup or sauce, for drizzling (optional)


Instructions

Step 1: Make the Cheesecake Filling
In a mixing bowl, beat the softened cream cheese until smooth and creamy.
Add powdered sugar and vanilla extract, and continue to beat until fully combined.
Fold in whipped topping using a spatula until the mixture is light and fluffy.
Refrigerate while you prepare the other elements.

Step 2: Prepare the Strawberry Crunch Topping
In a food processor, pulse the golden sandwich cookies and freeze-dried strawberries until you get a coarse crumb.
Drizzle in melted butter and pulse again until the mixture holds together slightly.
Set aside in a bowl.

Step 3: Prep the Cones
Place your waffle cones in small cups or a cone holder to keep them upright.
If desired, dip the rim of each cone in melted white chocolate and then into some of the crunch topping for extra flavor and decoration.

Step 4: Fill the Cones
Using a spoon or piping bag, add a spoonful of diced strawberries to the bottom of each cone.
Pipe or spoon in a generous amount of cheesecake filling.
Top with more diced strawberries and a sprinkle of the strawberry crunch.

Step 5: Garnish and Serve
Add a swirl of whipped topping if desired.
Drizzle with strawberry syrup for a sweet finishing touch.
