Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix—lumps are okay! If using mix-ins, fold them in now.
Scoop the batter into the muffin cups, filling each about ¾ full.
Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
