  • 200 grams fish fillets (Cod, Haddock, Basa, Tilapia)
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • 1 egg white
  • 4 tablespoons plain flour
  • 5 tablespoons cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • 34 tablespoons cold water
  • 3 tablespoons tomato ketchup
  • 1½ tablespoons rice vinegar (or white vinegar)
  • 2 tablespoons sugar (brown or white)
  • ¼ teaspoon cornstarch (for sauce thickening)
  • ½ onion (cut into small cubes)
  • 1 bell pepper (cut into squares)
  • 810 pineapple chunks (tinned or fresh)
  • 2 cloves garlic (finely chopped)

Instructions

  1. Pat dry the fish fillets and cut them into small cubes. Season with salt and white pepper.
  2. In a bowl, mix plain flour, cornstarch, garlic powder, and baking powder. Add the egg white and gradually pour in cold water until smooth.
  3. Coat the fish cubes in the batter and fry in preheated oil until golden brown, about 3–4 minutes.
  4. For the sauce, combine vinegar, ketchup, sugar, salt, cornstarch, and water in another bowl; mix well.
  5. Stir-fry garlic, onion, and bell pepper in a large pan until soft.
  6. Pour the sauce over the vegetables; cook until thickened before adding fried fish pieces. Toss everything together.
