- ½ teaspoon white pepper
- 1 egg white
- 4 tablespoons plain flour
- 5 tablespoons cornstarch
- ½ teaspoon baking powder
- ½ teaspoon garlic powder
- 3–4 tablespoons cold water
- 3 tablespoons tomato ketchup
- 1½ tablespoons rice vinegar (or white vinegar)
- 2 tablespoons sugar (brown or white)
- ¼ teaspoon cornstarch (for sauce thickening)
- ½ onion (cut into small cubes)
- 1 bell pepper (cut into squares)
- 8–10 pineapple chunks (tinned or fresh)
- 2 cloves garlic (finely chopped)
Instructions
- Pat dry the fish fillets and cut them into small cubes. Season with salt and white pepper.
- In a bowl, mix plain flour, cornstarch, garlic powder, and baking powder. Add the egg white and gradually pour in cold water until smooth.
- Coat the fish cubes in the batter and fry in preheated oil until golden brown, about 3–4 minutes.
- For the sauce, combine vinegar, ketchup, sugar, salt, cornstarch, and water in another bowl; mix well.
- Stir-fry garlic, onion, and bell pepper in a large pan until soft.
- Pour the sauce over the vegetables; cook until thickened before adding fried fish pieces. Toss everything together.
