Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 cup cornstarch
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 eggs (beaten)
- Canola oil (for frying)
- 1 cup pineapple chunks
- 1 red bell pepper (cut into chunks)
- 1 green bell pepper (cut into chunks)
- 1 yellow onion (cut into chunks)
- 3 cloves garlic (minced)
- 2/3 cup pineapple juice
- 1/4 cup orange juice
- 2 tablespoons soy sauce
- 1/4 cup light brown sugar
- 1/4 cup white sugar
- 1/4 cup rice vinegar
- 1/4 cup apple cider vinegar
- 1/3 cup ketchup
Instructions
- In a bowl, mix cornstarch, flour, salt, and black pepper. In another bowl, beat the eggs.
- Coat each shrimp in the egg mixture then roll in the cornstarch mixture. Set aside.
- Heat canola oil in a wok or large skillet over medium-high heat. Fry shrimp until golden brown; drain on paper towels.
- Sauté garlic, bell peppers, onion, and pineapple in the same skillet until tender-crisp.
- Whisk together pineapple juice, orange juice, soy sauce, sugars, vinegars, ketchup, garlic powder, cornstarch, and water in a separate bowl.
- Pour the sauce over the sautéed veggies; simmer until thickened.
