- 1 1/2 lbs chuck roast or chuck steak, cubed
- 2 tablespoons olive oil
- 1/4 cup all-purpose flour
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 onions, diced
- 2 carrots, chopped
- 1 (28 oz) can Italian diced tomatoes, undrained
- 2 cups beef or vegetable broth
- 1 1/2 tablespoons Worcestershire sauce
Instructions
- Preheat your oven to 350°F.
- In a large bowl, mix flour, smoked paprika, garlic powder, salt, and pepper.
- Coat the cubed beef in the flour mixture.
- Heat olive oil in a stockpot over medium-high heat. Brown the beef on all sides and set aside.
- Sauté onions and carrots until softened.
- Return the beef to the pot and add diced tomatoes, broth, and Worcestershire sauce.
- Cover and bake for 2 ½ to 3 hours until tender.
- For a thicker sauce, mix cornstarch with water and stir into the pot before serving.
