  • 1 1/2 lbs chuck roast or chuck steak, cubed
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 onions, diced
  • 2 carrots, chopped
  • 1 (28 oz) can Italian diced tomatoes, undrained
  • 2 cups beef or vegetable broth
  • 1 1/2 tablespoons Worcestershire sauce

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix flour, smoked paprika, garlic powder, salt, and pepper.
  3. Coat the cubed beef in the flour mixture.
  4. Heat olive oil in a stockpot over medium-high heat. Brown the beef on all sides and set aside.
  5. Sauté onions and carrots until softened.
  6. Return the beef to the pot and add diced tomatoes, broth, and Worcestershire sauce.
  7. Cover and bake for 2 ½ to 3 hours until tender.
  8. For a thicker sauce, mix cornstarch with water and stir into the pot before serving.
