For the Filling:

  • 1 lb ground beef

  • 1 tbsp taco seasoning

  • 1/3 cup water

  • 1 cup refried beans

  • ¼ cup white onion, finely chopped

  • 6 soft flour tortillas (68 inch)

For the Red Enchilada Sauce:

  • 2 tbsp vegetable oil

  • 2 tbsp all-purpose flour

  • 1 tbsp chili powder

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp cumin

  • ¼ tsp oregano

  • 1½ cups chicken broth or vegetable broth

  • Salt to taste

  • 1 tsp tomato paste (optional for depth)

For Topping:

  • 1½ cups shredded cheddar cheese or Mexican blend cheese

  • Extra chopped onion (optional)


Instructions

Step 1: Make the Beef Filling

  1. In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.

  2. Drain excess fat, then stir in taco seasoning and 1/3 cup of water.

  3. Simmer for 2–3 minutes until thickened, then remove from heat.

Step 2: Prepare the Red Sauce
4. In a saucepan, heat vegetable oil over medium heat.
5. Whisk in flour and cook for 1 minute to form a roux.
6. Stir in chili powder, garlic powder, onion powder, cumin, and oregano.
7. Slowly add broth while whisking to prevent lumps.
8. Add tomato paste if using and a pinch of salt.
9. Simmer for 5–7 minutes until slightly thickened. Remove from heat.

Step 3: Assemble the Enchiritos
10. Preheat oven to 375°F (190°C).
11. Warm tortillas slightly to make them pliable.
12. Spread 2 tablespoons of refried beans in the center of each tortilla.
13. Add a few spoonfuls of seasoned beef and a sprinkle of chopped onion.
14. Roll up each tortilla burrito-style, tucking in the sides.

Step 4: Sauce and Cheese
15. Place the rolled enchiritos seam-side down in a greased baking dish.
16. Spoon a generous amount of red sauce over each enchirito.
17. Top with shredded cheese.

Step 5: Bake
18. Cover with foil and bake for 15 minutes.
19. Remove foil and bake another 5–7 minutes, until cheese is melted and bubbly.

Step 6: Garnish & Serve
20. Let cool slightly before serving.
21. Garnish with more chopped onions if desired.
22. Serve with rice, chips, salsa, or a fresh salad.

Notes

Use Soft Tortillas – Makes rolling easier and prevents cracking.
Don’t Overfill – Keeps the rolls tight and prevents bursting.
