- 1 pound lean ground beef
- ½ yellow onion (diced)
- 1 teaspoon minced garlic
- 1 packet taco seasoning
- 12 ounce bag frozen corn
- 14.5 ounce can petite diced tomatoes with green chilies (undrained)
- 1 cup sour cream
- 2 cups finely crushed Doritos
- 3 cups Mexican blend cheese
- Optional: 1 cup black beans, sliced green onions, diced tomatoes, shredded lettuce, avocado
Instructions
- Preheat the oven to 350°F (175°C).
- Spray a 9×13 baking dish with nonstick spray.
- Crush two cups of Doritos finely and keep one cup loosely crushed for topping.
- In a large skillet over medium heat, cook ground beef and diced onion until browned; drain excess grease.
- Add garlic and sauté for one minute until fragrant.
- Stir in corn, taco seasoning, undrained tomatoes, and fine Doritos (add black beans if using).
- Remove from heat and mix in sour cream and two cups of cheese until combined.
- Pour into the prepared baking dish and bake for five minutes.
- Top with remaining cheese and loosely crushed Doritos; bake another five minutes until melted.
- Serve hot with optional garnishes.
