  • 2 pounds lean ground beef
  • 1 small onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 cup canned corn (drained)
  • 1 cup crushed nacho cheese chips
  • 1 can diced tomatoes with green chilies (drained)
  • 1 cup shredded cheddar cheese (divided)
  • 2 large eggs
  • 1 tablespoon taco seasoning mix
  • 1/2 cup enchilada sauce

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a large bowl, mix together ground beef, onion, garlic, corn, crushed chips, drained tomatoes, half of the cheese, eggs, and taco seasoning until well combined.
  3. Transfer the mixture to the loaf pan and shape it into a loaf.
  4. Pour enchilada sauce over the top and spread evenly.
  5. Bake for 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  6. Top with remaining cheese and return to oven for an additional 3-5 minutes until melted.
  7. Let rest before slicing and serve warm with your choice of toppings.
