For the Taco Filling:

  • 1 lb ground beef or ground turkey

  • 2 tbsp taco seasoning (store-bought or homemade)

  • ⅓ cup water

  • ½ cup shredded cheddar cheese

  • 2 tbsp ranch dressing

  • ¼ cup canned diced tomatoes (drained)

  • ¼ cup chopped green onions (optional)

For the Dough:

  • 1 can refrigerated biscuit dough (8-count)

  • 2 tbsp melted butter (for brushing)

  • 1 tsp garlic powder (optional)

  • 1 tsp dried parsley (optional)

For Topping & Garnish:

  • Extra shredded cheese

  • Sour cream, salsa, or guacamole for dipping

  • Chopped cilantro (optional)


Instructions

Step 1: Cook the Taco Filling

  1. In a skillet over medium heat, brown the ground beef until fully cooked.

  2. Drain excess grease, then stir in taco seasoning and water.

  3. Simmer for 2–3 minutes until thickened.

  4. Stir in ranch dressing, shredded cheese, diced tomatoes, and green onions.

  5. Remove from heat and set aside to cool slightly.

Step 2: Prep the Dough
6. Preheat oven to 375°F (190°C).
7. Separate biscuit dough and flatten each piece into a 3–4 inch round using your hands or a rolling pin.
8. Lightly grease a baking sheet or muffin tin.
9. Place a dough round on the surface and spoon about 1 tbsp of taco filling into the center.
10. Fold edges over the filling and pinch to seal, forming a ball. Place seam-side down.
11. Repeat with remaining dough and filling.

Step 3: Brush and Bake
12. Mix melted butter with garlic powder and parsley.
13. Brush the tops of the bites generously with the butter mixture.
14. Bake for 12–15 minutes, or until golden brown.
15. For an extra cheesy finish, sprinkle more shredded cheese on top during the last 2 minutes of baking.

Step 4: Serve & Enjoy
16. Remove from oven and cool slightly before serving.
17. Serve with sour cream, salsa, or guacamole on the side.
18. Garnish with fresh cilantro or green onions if desired.

Notes

Seal Well – Press edges tightly to avoid filling leaks during baking.
Cool the Filling – Let it cool slightly before adding to dough to prevent sogginess.
Add Heat – Toss in diced jalapeños or hot sauce for a spicier version.
Make Ahead – Assemble and refrigerate unbaked bites for up to 24 hours.
Air Fry Option – Cook at 350°F (175°C) for 8–10 minutes, checking for golden color.
