Ingredients

Scale
  • 2 pounds stew meat (chuck meat)
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 4 cloves garlic
  • 2 quarts beef stock
  • Flour (for stew and dumplings)
  • Baking powder
  • Butter
  • Milk

Instructions

  1. Chop all vegetables: dice onion, slice carrots, cube potatoes, and mince garlic.
  2. In a Dutch oven over medium-high heat, brown the seasoned beef in batches until well-seared. Remove from pot temporarily.
  3. Sauté onions and garlic until translucent; then add carrots and potatoes along with fresh herbs.
  4. Sprinkle flour over veggies, mix well; stir in tomato paste, then gradually add beef stock to create the stew base.
  5. Return browned beef to pot, bring to a boil; reduce heat and let simmer for about 90 minutes until tender.
  6. For dumplings, combine flour, baking powder, sea salt in a bowl; cut in butter until crumbly. Gradually add milk until just mixed.
  7. Drop spoonfuls of dumpling batter onto the stew's surface; cover tightly and cook for an additional 15-20 minutes without lifting the lid.
