For the Teriyaki Chicken:

  • 4 boneless, skinless chicken breasts – Tender and juicy.
  • ½ cup teriyaki sauce – For that sweet and savory glaze.
  • 1 tablespoon olive oil – For grilling the chicken.
  • 1 teaspoon garlic powder – To add a savory depth.
  • Salt and pepper, to taste – For seasoning.

For the Grilled Pineapple Pear Salsa:

  • 1 cup fresh pineapple, peeled and chopped – Sweet, juicy, and tropical.
  • 1 ripe pear, diced – For a hint of crisp sweetness.
  • ½ red onion, finely diced – Adds a little sharpness.
  • 1 small jalapeño, deseeded and minced (optional) – For a little heat.
  • 2 tablespoons fresh cilantro, chopped – To brighten up the salsa.
  • 1 tablespoon lime juice – For a refreshing citrusy kick.
  • Salt, to taste – To bring out all the flavors.

For the Tacos:

  • 8 small soft tortillas – Flour or corn, whichever you prefer.
  • Shredded lettuce – For crunch and freshness.
  • Sour cream or Greek yogurt (optional) – For a creamy finish.

Instructions

Step 1: Prepare the Chicken

  1. In a small bowl, mix the teriyaki sauce, garlic powder, salt, and pepper.
  2. Coat the chicken breasts with the sauce mixture, making sure they’re well-covered.
  3. Heat olive oil in a grill pan or on an outdoor grill over medium-high heat.
  4. Grill the chicken for 5-7 minutes per side until cooked through and golden brown, basting with more teriyaki sauce halfway through. Once done, remove from heat and let it rest.

Step 2: Make the Grilled Pineapple Pear Salsa

  1. While the chicken is grilling, place the pineapple and pear on the grill for 2-3 minutes until slightly charred.
  2. Dice the grilled pineapple and pear, and place them in a bowl.
  3. Add the red onion, jalapeño (if using), cilantro, and lime juice to the bowl.
  4. Toss everything together, then season with salt to taste. Set the salsa aside.

Step 3: Assemble the Tacos

  1. Warm the tortillas in a skillet or microwave for about 30 seconds until soft and pliable.
  2. Slice the grilled chicken into thin strips.
  3. To assemble, place some shredded lettuce on each tortilla, then top with the sliced chicken.
  4. Spoon a generous amount of grilled pineapple pear salsa over the chicken.
  5. Add a dollop of sour cream or Greek yogurt, if desired.

Step 4: Serve and Enjoy

  1. Serve the tacos immediately, garnished with extra cilantro if you like.
  2. Enjoy with a side of chips or a light salad!

Notes

  • For an extra charred flavor, grill the tortillas for a few seconds to get grill marks before assembling the tacos.
  • Swap the pear for mango if you prefer a different sweet fruit in the salsa.
  • If you like it spicier, add more jalapeño or drizzle with hot sauce for an extra kick.
