For the Teriyaki Chicken:
- 4 boneless, skinless chicken breasts – Tender and juicy.

For the Grilled Pineapple Pear Salsa:
- 1 cup fresh pineapple, peeled and chopped – Sweet, juicy, and tropical.
- 1 ripe pear, diced – For a hint of crisp sweetness.
- ½ red onion, finely diced – Adds a little sharpness.
- 1 small jalapeño, deseeded and minced (optional) – For a little heat.
- 2 tablespoons fresh cilantro, chopped – To brighten up the salsa.
- 1 tablespoon lime juice – For a refreshing citrusy kick.
- Salt, to taste – To bring out all the flavors.
For the Tacos:
- 8 small soft tortillas – Flour or corn, whichever you prefer.
- Shredded lettuce – For crunch and freshness.
- Sour cream or Greek yogurt (optional) – For a creamy finish.
Instructions
Step 1: Prepare the Chicken
- In a small bowl, mix the teriyaki sauce, garlic powder, salt, and pepper.
- Coat the chicken breasts with the sauce mixture, making sure they’re well-covered.
- Heat olive oil in a grill pan or on an outdoor grill over medium-high heat.
- Grill the chicken for 5-7 minutes per side until cooked through and golden brown, basting with more teriyaki sauce halfway through. Once done, remove from heat and let it rest.
Step 2: Make the Grilled Pineapple Pear Salsa
- While the chicken is grilling, place the pineapple and pear on the grill for 2-3 minutes until slightly charred.
- Dice the grilled pineapple and pear, and place them in a bowl.
- Add the red onion, jalapeño (if using), cilantro, and lime juice to the bowl.
- Toss everything together, then season with salt to taste. Set the salsa aside.
Step 3: Assemble the Tacos
- Warm the tortillas in a skillet or microwave for about 30 seconds until soft and pliable.
- Slice the grilled chicken into thin strips.
- To assemble, place some shredded lettuce on each tortilla, then top with the sliced chicken.
- Spoon a generous amount of grilled pineapple pear salsa over the chicken.
- Add a dollop of sour cream or Greek yogurt, if desired.
Step 4: Serve and Enjoy
- Serve the tacos immediately, garnished with extra cilantro if you like.

Notes
- For an extra charred flavor, grill the tortillas for a few seconds to get grill marks before assembling the tacos.
