  • 16 oz Mascarpone
  • 1 cup heavy whipping cream
  • 6 egg yolks
  • 1/2 cup white granulated sugar
  • 3 tbsp white granulated sugar
  • 10 oz Ladyfingers cookies
  • 1 ½ cup cold espresso (or instant espresso powder)
  • 2 tbsp almond extract
  • 2 tbsp cocoa powder for dusting

Instructions

  1. In a large mixing bowl, whisk together egg yolks and 1/2 cup sugar until smooth. Stir in mascarpone cheese and almond extract until well combined.
  2. In another bowl, whip heavy cream with an electric mixer until soft peaks form. Gradually add 3 tablespoons of sugar until stiff peaks form.
  3. Gently fold whipped cream into the mascarpone mixture using a rubber spatula.
  4. Quickly dip each Ladyfinger into cold espresso for about one second on each side. Layer half of the soaked cookies in an 8×8 inch dish and spread half of the mascarpone mixture over them. Repeat with another layer of soaked Ladyfingers and remaining cream.
  5. Dust with cocoa powder, refrigerate for at least four hours (preferably overnight), then serve.
