  • 4 salmon fillets (skin-on)
  • Salt and pepper
  • Olive oil
  • Garlic
  • Sun-dried tomatoes
  • Cherry tomatoes
  • Baby spinach
  • Heavy cream
  • Parmesan cheese
  • Red chili flakes
  • Lemon zest and juice
  • Fresh basil and parsley for garnish

Instructions

  1. Season salmon fillets with salt and pepper.
  2. In a skillet over medium-high heat, warm olive oil. Cook the salmon skin-side down for 4-5 minutes until crispy; flip and cook for another 3-4 minutes. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant. Add sun-dried and cherry tomatoes; cook until soft.
  4. Stir in baby spinach until wilted, then add heavy cream and Parmesan cheese. Simmer for 2-3 minutes before adding lemon zest and juice.
  5. Return salmon to the skillet, allowing it to simmer gently in the sauce for a couple of minutes.
  6. Garnish with fresh basil and parsley before serving.
