For the Cake:

  • 2 cups almond flour (packed and leveled)

  • ½ cup coconut flour

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 4 large eggs

  • ½ cup unsweetened applesauce

  • ½ cup unsalted butter, melted (or coconut oil)

  • ½ cup erythritol or monk fruit sweetener (granulated)

  • ¾ cup unsweetened almond milk (or any milk of choice)

  • 1 tbsp pure vanilla extract

For Optional Sugar-Free Frosting:

  • 8 oz cream cheese, softened

  • ¼ cup unsalted butter, softened

  • ½ cup powdered erythritol or monk fruit sweetener

  • 1 tsp vanilla extract

  • 23 tbsp heavy cream or milk (to desired consistency)

For Garnish (Optional):

  • Fresh berries

  • Unsweetened shredded coconut

  • Chopped nuts

  • Dusting of powdered sweetener


Instructions

Step 1: Preheat the Oven & Prepare the Pan
Preheat your oven to 350°F (175°C).
Lightly grease a 9-inch cake pan and line the bottom with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients
In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt.
Break up any lumps and ensure everything is well combined.

Step 3: Beat the Wet Ingredients
In another bowl, whisk the eggs until frothy (about 1 minute).
Add applesauce, melted butter, sweetener, almond milk, and vanilla extract.
Mix until smooth and creamy.

Step 4: Combine Wet and Dry
Gradually stir the dry ingredients into the wet mixture.
Mix just until combined—do not overmix. The batter will be thick but scoopable.

Step 5: Bake the Cake
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 6: Make the Frosting (Optional)
In a bowl, beat cream cheese and butter until smooth.
Add powdered sweetener and vanilla extract, and beat until fluffy.
Add milk or cream as needed to reach desired spreading consistency.

 

Step 7: Frost and Decorate
Once the cake is completely cool, spread the frosting evenly over the top.
Decorate with fresh berries, nuts, or a sprinkle of sugar-free sweetener if desired.

Notes

Don’t Skip the Applesauce – It adds moisture and helps with sweetness naturally.
Room Temp Ingredients – Bring eggs and milk to room temperature for best mixing.
Use Fresh Baking Powder – To ensure the cake rises properly.
Cool Completely – Before frosting to avoid melting the cream cheese mixture.
Customize It – Add lemon zest, cinnamon, or even a touch of almond extract for variation.
