  • 2 cups cooked chicken (diced)
  • 8 oz cream cheese (room temp)
  • 1 ½ lbs tomatillos (cleaned)
  • 1 jalapeño (seeds removed)
  • 6 tortillas
  • 8 oz shredded cheddar cheese
  • Fresh cilantro
  • Lime juice

Instructions

  1. Blend tomatillos, jalapeño, garlic, salt, lime juice, and cilantro until smooth.
  2. In a bowl, mix diced chicken, cream cheese, oregano, cheddar cheese, and salt until well combined.
  3. Preheat oven to 375°F (190°C). Spread some sauce in a baking dish. Fill each tortilla with the chicken mixture, roll up tightly, and place seam-side down in the dish.
  4. Pour remaining sauce over the enchiladas and sprinkle extra cheese on top. Cover with foil and bake for 20 minutes. Remove foil for the last five minutes to brown the cheese.
  5. Let cool slightly before serving topped with diced avocado and shallots.
