Ingredients
- 9 lasagna noodles
- 1 tablespoon butter
- 1 pound medium uncooked shrimp, peeled and deveined
- 1 pound bay scallops
- 5 garlic cloves, minced
- 1/4 cup white grape juice
- 1 tablespoon lemon juice
- 1 pound lump crabmeat
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly shredded Parmesan cheese
- Salt
- Black pepper
- Crushed red pepper flakes
- Nutmeg
- 1 (15-ounce) carton ricotta cheese
- 1 large egg
- Fresh spinach, thawed and drained
Instructions
- Cook lasagna noodles according to package directions; drain and set aside.
- In a large skillet, melt butter over medium heat. Add shrimp and cook until mostly pink; remove and set aside. Cook scallops briefly until halfway done; set aside with shrimp.
- In the same skillet, add garlic and sauté for 2 minutes. Pour in white grape juice and lemon juice; scrape the pan's bottom. Stir in crabmeat along with cooked shrimp and scallops.
- For the cheese sauce: In a saucepan, melt butter, stir in flour to create a roux; gradually whisk in milk until thickened. Add mozzarella cheese, Parmesan cheese, salt, pepper, crushed red pepper flakes, and nutmeg.
- In a bowl, combine ricotta cheese, egg, mozzarella cheese, Parmesan cheese, and spinach.
- Preheat oven to 350°F (175°C). Grease a baking pan. Layer half a cup of cheese sauce on the bottom; add noodles followed by ricotta mixture and seafood mixture; top with two-thirds of the cheese sauce.
- Repeat layers: noodles, remaining ricotta mixture, seafood mixture; finish with remaining noodles topped with remaining cheese sauce.
- Bake uncovered for about 20 minutes; mix together Parmesan cheese with melted butter and bread crumbs; sprinkle on top and bake for an additional 20-25 minutes until golden brown.
- Garnish with chopped parsley before serving.
