Ingredients

Scale
  • 3 large Granny Smith apples
  • 1 cup water
  • 1/4 cup cornstarch
  • 1 cup granulated sugar (divided)
  • 1 tsp ground cinnamon (divided)
  • 6 flour tortillas (10 inches)
  • 6 tbsps caramel sauce (divided)
  • Cooking spray
  • Optional: Vanilla ice cream for serving

Instructions

  1. Preheat the air fryer to 400°F.
  2. In a small pan, whisk together water and cornstarch until smooth. Add 3/4 cup sugar, 3/4 tsp cinnamon, nutmeg, vanilla extract, lemon juice, and salt; stir over medium heat until thickened (about 2 minutes). Add diced apples and reduce heat; cook for 7-12 minutes until soft.
  3. Take each warm tortilla and spread 1 tablespoon of caramel sauce on it. Add about 1/2 cup of the apple mixture, tuck in the ends, and roll tightly.
  4. Spray the air fryer basket with cooking spray. Place two rolled chimichangas seam side down and air fry for approximately 7 minutes or until golden brown.
  5. Mix remaining granulated sugar with brown sugar in a shallow bowl. Roll cooked chimichangas in this mixture while warm.
  6. Serve with additional caramel sauce and vanilla ice cream if desired.
