  • 3 pound boneless beef chuck roast
  • Salt and black pepper
  • 2 tablespoons vegetable oil
  • 1 yellow onion
  • 5 cloves garlic
  • 4 chipotle peppers in adobo sauce
  • ¼ cup lime juice
  • 3 cups beef broth
  • 8 tortillas (corn or flour)
  • Diced white onion
  • Cilantro
  • Cotija cheese
  • Avocado

Instructions

  1. Preheat oven to 300°F. Season beef with salt and pepper. In a Dutch oven, heat oil over medium-high heat and sear the beef until browned on all sides. Remove from pot.
  2. In the same pot, add diced onion, minced garlic, chipotle peppers, vinegar, lime juice, beef broth, cumin, chili powder, oregano, ground clove, and bay leaves. Bring to a boil.
  3. Return seared beef to the pot with its juices. Cover tightly and bake for 2½–3 hours until fork-tender. Shred the beef using forks and return it to the cooking liquid.
  4. Warm tortillas by toasting or heating in a skillet.
  5. Assemble tacos by placing shredded barbacoa on each tortilla and topping with diced onion, avocado slices, cilantro, cotija cheese, and fresh lime juice.
