Ingredients

Scale
  • 3/4 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • 1/8 tsp salt
  • 2 medium bananas
  • 1 large egg
  • 1/4 cup whole milk
  • 3 Tbsp unsalted butter (melted)
  • 1 Tbsp vanilla extract
  • 4 Tbsp rainbow sprinkles
  • 1 quart Neapolitan ice cream (vanilla, chocolate, strawberry)
  • 1/2 cup sliced strawberries
  • 1/4 cup chopped walnuts
  • Chocolate syrup and whipped cream for topping
  • 2 maraschino cherries

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, cornstarch, and salt.
  2. In a blender, combine one banana (reserve the second), egg, milk, melted butter, and vanilla; blend until smooth.
  3. Pour the blended mixture into the dry ingredients and stir gently until just combined. Fold in three tablespoons of sprinkles.
  4. Preheat your Waffle Puff Pan over medium heat and lightly spray it with cooking oil. Pour 3/4 cup of batter into each section and cook for about three minutes until golden brown.
  5. Carefully remove each waffle from the pan using a fork and fold into taco shapes. Let cool in a loaf pan for at least ten minutes.
  6. Fill each taco shell with three scoops of Neapolitan ice cream and top with sliced bananas, strawberries, walnuts, chocolate syrup, whipped cream, remaining sprinkles, and a maraschino cherry.
