  • 1/3 cup sugar
  • 1 cup water
  • 1/8 tsp nutmeg
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 tsp lemon juice
  • 4 small flour tortillas
  • 1/4 cup sugar (for coating)
  • 1/2 tbsp cinnamon (for coating)
  • 4–5 tsp caramel sauce
  • 1/4 cup vegetable oil

Instructions

  1. Prepare the Apples: Peel and chop the apples into small cubes.
  2. Cook the Filling: In a saucepan, combine water, sugar, salt, lemon juice, cinnamon, vanilla extract, nutmeg, and cornstarch. Stir and heat over medium heat for about 3 minutes until thickened.
  3. Add Apples: Stir in the chopped apples and cook for about 10 minutes until soft. Remove from heat and let cool slightly.
  4. Assemble Chimichangas: Spread about 1 teaspoon of caramel sauce on each tortilla. Add a spoonful of apple filling on top. Fold sides inward and roll tightly.
  5. Fry Chimichangas: Secure with toothpicks. Heat vegetable oil in a frying pan over medium heat and fry chimichangas until golden brown on all sides using tongs.
