  • 1 lb chicken breast (cubed)
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 3 ½ to 4 cups chicken broth
  • 2 ½ cups elbow pasta (uncooked)
  • 3 cups chopped broccoli
  • 8 oz Colby Jack cheese (shredded)
  • ⅓ cup milk
  • Seasonings: salt, pepper, paprika, garlic powder, onion powder, ranch seasoning

Instructions

  1. Cut the chicken into small cubes and chop the broccoli into bite-sized pieces.
  2. In a large skillet over medium-high heat, add olive oil and sauté the chicken and onion seasoned with salt, pepper, paprika, garlic powder, onion powder, and ranch seasoning until the chicken is nearly cooked through.
  3. Add uncooked elbow pasta, chopped broccoli, and chicken broth (start with 3 ½ cups) to the skillet.
  4. Bring to a boil then reduce heat to medium-low. Cover and simmer for about 12-15 minutes until pasta is tender.
  5. Stir in half of the shredded cheese and milk; mix well until combined.
  6. Top with remaining cheese and cover until melted or broil briefly for a bubbly finish. Garnish with dried parsley before serving.
