Ingredients

Scale
  • 1 tbsp Unsalted Butter
  • 1/2 cup Finely Chopped Tomatoes
  • 1/2 cup Finely Chopped Bell Pepper
  • 1/3 cup Finely Chopped White Onion
  • 1 clove Garlic (minced)
  • Salt and freshly cracked Black Pepper to taste
  • 1/2 lb Ground Beef
  • 1 tbsp Taco Seasoning
  • 1/3 cup Refried Beans
  • 3 10-inch Flour Tortillas
  • 1 1/2 cups Shredded Cheese (cheddar, pepperjack, or similar)
  • Guacamole and Pico de Gallo for serving

Instructions

  1. In a large skillet over medium heat, melt the butter. Add tomatoes, bell pepper, onion, and garlic; season with salt and pepper. Sauté until the veggies are tender (about 5-7 minutes).
  2. Stir in ground beef and taco seasoning. Cook until the beef is browned (about 5 minutes), breaking it up as it cooks.
  3. Mix in the refried beans until well blended. Transfer the mixture to a bowl and keep warm.
  4. In the same skillet, place one tortilla and sprinkle half a cup of cheese on one side. Add half a cup of the beef mixture on top of the cheese.
  5. Fold the tortilla over and press gently with a spatula. Cook until browned (about 2 minutes), then flip and cook on the other side until crispy.
  6. Remove from heat, let cool briefly before slicing. Repeat with remaining tortillas.
  7. Serve hot with guacamole and pico de gallo.
